Ingredients Needed
This recipe is super simple and only requires six ingredients, most of which you probably already have in your pantry! Dates, cashews (or another nut of your choosing), rolled oats, shredded coconut, vanilla extract and nut-based milk are all you need to complete this sweet treat.
Measurements:
- 1 cup of rolled oats
- 1 cup of cashews (or another nut of your choosing)
- ¼ cup of shredded coconut
- 1 cup of medjool dates
- 1 teaspoon of vanilla extract
- 2 tablespoons of nut-based milk
Get Mixing!
Before beginning, make sure to soak your dates in hot water to soften them up! Once softened, remove the pits and set them aside for later use.
In a high-power blender, or food processor, begin by adding your oats and cashews and grind down to a fine powder. Make sure to scrape the sides of the blender/processor to ensure all the ingredients are mixed together evenly!
Next, add in the remainder of the ingredients, including the de-pitted dates you had set aside, and blend until properly mixed. You are looking for a smooth and sticky consistency so continue to add your nut-based milk to achieve the prime consistency!
Once everything is combined, use a spoon and your clean hands to roll spoonfuls of the mixture into bite-sized balls. Pro tip: keep some shredded coconut out to sprinkle on the balls for extra flavor and crunch! After rolling all the bliss balls, pop them in the fridge or freezer to set them for about 30 minutes and then dive in and enjoy!
